Bikaner. On hearing the name of Golgappa, people’s mouth starts watering. Usually Golgappas of four to five flavors are available everywhere. But, the matter of Golgappa of Bikaner’s Dharmendra Agarwal is different. They make about 150 types of golgappas with their own hands. People from every corner of India come to Bikaner to taste these 150 types of Golgappas.

Dharmendra Agarwal keeps golgappas in a taxi behind Annacha Bai Hospital in the city. However, 150 types of flavors do not come together in this taxi, so they keep 20 to 25 types of flavors in their taxi at all times. Dharmendra tells that when the order comes, 150 types of golgappas are made.

Dharmendra told that the purpose of making different types of golgappas is that people want different types of taste, so they make many types of golgappas. Dharmendra told that one day while making golgappas, the whole packet of red chillies fell in the prepared masala, the whole masala got spoiled. I made golgappas with the same spice, the taste of mismatched spices turned out to be amazing. The customers also liked the spice which was more spicy than everyday. One day they tried making golgappas made of cabbage water, they got applause from the people. Also made potato and onion flavored gol gappas. Then everyday new ideas kept coming to mind, golgappas kept on being made – as the customers ate, his morale increased.

Dharmendra told that he has been making golgappas since 2009. Name has also been registered in Limca Book of National Records in 2010. He made a record in Limca Book of making 121 types of golgappas and today he makes 150 types of golgappas.

Whereas 6 out of 20 are available without flavor. They tell that these golgappas do not spoil for two months due to lack of sunlight.
